Blackberry Vinaigrette Dressing

Yields: 1 Cup

Ingredients

  • 1 Cup Fresh Blackberries
  • 1/2 Cup Water
  • 2 Tbsp Rice Vinegar
  • 1/2 Lemon (juice of)
  • 1 Tsp Granulated Sugar
  • 6 Tbsp Extra Virgin Olive Oil
  • 1/2 Tsp Garlic Salt

Instructions

  • In a small saucepan, combine the fresh blackberries and 1/2 cup of water. Gently warm the mixture over low to medium heat until the blackberries soften and release their juices, usually about 5-7 minutes.
  • Set a fine mesh strainer over a mixing bowl. Carefully transfer the softened blackberries and their liquid into the strainer. Using a spatula or the back of a spoon, press the blackberries firmly against the mesh, extracting as much juice as possible into the bowl. Continue until only the seeds and pulp remain in the strainer, discarding the solids.
  • To the blackberry juice in the mixing bowl, add the rice vinegar, fresh juice from half a lemon, granulated sugar, extra virgin olive oil, and garlic salt.
  • Whisk all the ingredients together vigorously until well combined and emulsified. Taste and adjust seasoning if necessary, adding more sugar, lemon, or garlic salt to your preference.
